2023-01-22 I followed the recipe here:

The gist of it that was unique and unintuitive was:

  • Take cold meat and roll it into a ball
    • In my case I made 6 patties from 1lb of meat and that turned out great
    • Use 80/20 beef
  • Put it into the pan, in my case three at a time and use a piece of parchment paper + a spatula and a meat tenderizer to smash it as flat as you can
  • Cook for two minutes on the first side and flip and cook 1 minute on the second side. (On Medium-High Heat). In my case a had a small amount of olive oil.
  • While the first side is cooking apply salt, pepper and garlic point for the opposite side
  • Once you’ve cooked both sides add a little Burger sauce and add cheese and stack
  • Burger sauce is mayonaise with a touch of yellow mustard
  • The recipe calls to add burger sauce and then flip, but I found that my second side didn’t cook the way I wanted it to when I did that.
